Sweetheart Donuts

It doesn't have to be Valentine's day to appreciate what I call, "Sweetheart" donuts.  In fact, it doesn't even have to be February.  




I got the pan 1/2 off at Target after Valentine's day - it is a Wilton.  You can use the regular round donut shaped pans as well.  Here is the recipe:
2 cups cake four, sifted (use 1 3/4 c all purpose plus 1/4 c corn starch if you do not have cake flour)
2 teaspoons baking powder
1/4 tsp. ground nutmeg (I like to grate mine fresh using a microplane grater)
1 tsp. salt
2 eggs, lightly beaten
3/4 cup buttermilk (or you can use Kefir)
3/4 cup granulated sugar
2 tablespoons butter, melted
Preheat oven to 425*. Combine 1st 4 ingredients in 1 bowl.  In another bowl beat the eggs with a wisk, add the buttermilk and wisk until combined, then add the sugar and wisk some more until smooth.  Next, drizzle in the butter while wisking some more.  Dump in the dry ingredients and wisk until blended.  I put my batter into a batter dispenser - makes it easier.  However, this thick batter will be fine if you just want to drop it into the pan with a teaspoon.
Spray pan with cooking spray. Fill each donut cup 1/2 way and bake for 5 minutes (until donut springs back when lightly pressed.  Cool 3 minutes and remove from pan.  
Glaze donuts with the following recipe:
1 cup confectioners' sugar
3 tablespoons milk ( I use 1/2 n 1/2)
1/2 tsp. cinnamon
1/4 tsp. almond extract
few drops of pink gel food coloring (or any color)
